As a busy mom of five kids and a handsome husband I am always looking for the perfect go-to meal that is quick, tasty, and affordable. A few years ago my friend Sandy made this swiss cheese chicken recipe for my family and it was an instant family favorite! I was completely amazed that not one child complained, moaned, or groaned about what was being presented in front of them. They all ate everything on their plate and some even asked for seconds.(It was a miracle!) Since then I have made this meal multiple times and every time I make it my kids get excited. They also love helping me make this recipe because it’s quick and easy and I know it’s something they will enjoy eating once it’s finished.
Every home cook has a basic chicken and rice recipe they use in a pinch and this swiss cheese chicken recipe is mine. The lemon and swiss cheese in the recipe create a bit of a zesty flavor while the Panko bread crumbs add a little crunch. The best thing is that most of the ingredients are things you probably already keep in your fridge or pantry. I hope your family enjoys this as much as we do.
Swiss Cheese Chicken… A Soon To Be Family Favorite
6-7 chicken breasts
12 slices of swiss cheese
One canister or box of Panko bread crumbs
One large family size can of cream of chicken soup
3 – 4 tablespoons of lemon juice
1 cup mayonnaise
½ cup milk
Spray a 9×13 baking pan with nonstick cooking spray. Cover bottom of pan with panko bread crumbs. Place 6-7 frozen or thawed chicken breast on top of the bread crumbs. Place enough swiss cheese slices on top of chicken breast to cover the pan.
In a separate mixing bowl combine cream of chicken soup, lemon juice, mayonnaise, and milk. Pour sauce over swiss cheese slices and spread evenly. Sprinkle remaining bread crumbs over the sauce.
Place in a 375-degree oven for 1 hour or until chicken breasts are cooked through. (I usually make this with frozen chicken breast and it takes about an hour and a half to bake.) Serve over rice.
