We love soup at our house! I have some go-to soups that I love to cook and LOVE to eat. I found the idea for this Italian Chicken soup on the back of the Orzo package. The recipe seemed more like a simple broth so I added garlic, tomatoes, spinach, parmesan cheese and voila! This Italian Chicken soup is by far my husbands favorite. That may be because I always serve it with a slice of French bread but I like to think it is because the broth has a wonderful flavor. It is also my 8 year old’s favorite, he smiles from ear to ear when he smells the soup’s fragrant aroma! I hope you try this delightful recipe and that your family enjoys it as much as mine does!
Italian Chicken Soup
- 64 oz of chicken broth
- 2 tablespoons of diced garlic
- 10 oz of frozen diced onions or large diced onion
- 1 cup of orzo
- cooked shredded chicken
- fresh tomatoes (seeded) then diced
- finely chopped spinach (for a bit of color and nutrition)
- parmesan cheese
- olive oil
- salt and pepper
Begin by putting onions in a large soup pot, drizzle olive oil on top, then heat on medium-high temp. When onions have lightly browned and become somewhat transparent, add garlic in the middle of the pot with another small drizzle of olive oil. Turn heat down and watch garlic because it can burn quickly. You want the garlic to brown slightly to unlock the flavor. (This is the same step in my Chicken Tortilla Soup recipe)
Add chicken broth and shredded chicken to the pot. Add the tomatoes closer to serving time. Don’t allow it to boil with tomatoes because they will lose their color and become mushy.
Top with chopped spinach and parmesan cheese. Salt and pepper to taste. Serve with French bread and salad.
