Last week Mandy wrote all about the Instant Pot and how much a few of us Mama Birds love it! It’s kind of a funny story about how they all got one. I was at my mom’s over Thanksgiving and I told them all that the Instant Pot was the best thing since sliced bread and that they would LOVE IT! We decided that we would get my parents one for their Christmas gift, then my mom bought one for Mandy. Then she asked Diana if she would want one. I guess she didn’t ask Jen. So on Christmas morning when everyone, but Jen ,opened their Instant Pot, Jen was like, “what is this thing?” She felt a little left out! 🙂 Sorry Jen! I’m sure you will get one soon after you see how much we all love ours!! Anyway, for us Mama Birds that have an Instant Pot, we LOVE it, and have been having fun experimenting with new recipes! This last week I have been doing a ton of veggies in it, so today I thought I would share how I made this quick and easy Asparagus recipe!
I am in a few Instant Pot groups on Facebook and a lot of people thought that the Instant Pot was only beneficial for meat eaters. I laughed when I read this because it is not! Other than meat you can cook, oats, rice, noodles, veggies, soups, and so much more! I have been doing lots of veggies this week. Last week on my other blog I shared how to do Butternut Squash, I also did red potatoes in it last night and they were SO yummy!
Quick & Easy Asparagus in the Instant Pot
My family loves asparagus and making it in the Instant Pot was so simple! I love to buy my Asparagus at Costco. I just cut the ends off, place the wire rack in the Instant Pot, put all of the Asparagus in the pot, and pour 1 cup of water into the bottom. Seal the pot with the lid and make sure the knob is on “sealing”, then push MANUAL and adjust the time to 3 minutes. I did five at first and it was a little too mushy, so 3-4 would be perfect! After it beeps, do a quick release of the knob to “venting” and then pull the lid off and pull the wire rack out and put it on a plate! Top with butter and salt!
