A few years ago my neighbor dropped by a delicious plate of banana muffins. After my kids and I devoured the tasty treat I called her for the recipe. I had tackled making banana muffins before, but most often they were dense, dry, or resembled more of a brick than a muffin. She told me she had received the recipe from another one of our neighbors a few years before. I eventually tracked down the recipe from our mutual friend and neighbor and was surprised that it only included nine basic ingredients and that they were so quick and easy to make.
Simple And Delicious Banana Muffins…You Can’t Stop At One
A few days ago I had some very ripe bananas and a “hankerin” for these delectable bites. I quickly whipped up a double batch and over the next few days my kids could not get enough of them. They ate them for breakfast, were thrilled when I put them inside their school lunches, and wanted them for a good night snack as well. Trust me. These are delicious and are a great addition to your “what to do with overripe banana” repertoire. Enjoy these simple and delicious banana muffins…you will not be able to stop at one. (I promise!)
Banana Muffin Recipe:
1 Cup of Mashed Bananas (usually about 3 whole bananas)
1 1/2 Cups of Sugar
3/4 Cup of Oil
1 1/2 Cups of Milk
1T. of Lemon Juice- Mix into the milk and let it set while adding in other ingredients
1 tsp. Baking Soda
1/4 tsp. Salt
2 1/2 Cups Flour
Directions: Preheat oven to 350 degrees. Mash ripe bananas and set side. In a mixing bowl mix together sugar, oil, eggs, and milk/lemon juice. Add mashed bananas and continue mixing. Add in baking soda and salt and mix well. Add in flour a little at a time until everything is combined. Bake at 350 degrees for 20 minutes.
