Hey everyone, I’m back and excited to share this yummy Green Eggs recipe with you. But let’s first chat a little about life and healthy eating! You know when you’re trying to feed your family healthy and then you resort to pizza? I try so hard, but some nights I’m just so tired that making Macaroni & Cheese or ordering a pizza are all I want to do! This last month I have really tried hard not to resort to pizza or cold cereal at nights. I’ve always struggled with meal planning though. For some reason I get so excited about a meal plan, but then never have the time, or make the time to cook what is on my meal plan. This year I am going back to my 2 month meal plan that I made 2 years ago and am super motivated to do it! I have great recipes that are, for the most part, nutritious and healthy. One of my favorite meals I remember having as a child was breakfast for dinner. Who doesn’t love a good breakfast for dinner? I also really love scrambled eggs. A few years ago I was sitting outside with some friends and I was talking about making green eggs for St. Patricks day. One friend said she just added food coloring. I have tried it where you just throw fresh spinach in with the scrambled eggs once they are almost cooked. I thought it was kind of disgusting because you have this slimy spinach next to your eggs and I don’t really like slimy spinach. A friend of mine suggested that you put the spinach in the blender with the eggs and milk and blend it completely up so that it changes everything to a green liquid. I have since tried it and I have not gone back. I make it weekly. The only person in my family that doesn’t like it is my daughter, but she hates anything and everything with spinach and says that she can taste it. My boys would rather have spinach scrambled eggs than regular scrambled eggs! So today I am here to share with you how to make Green Eggs naturally colored They look totally fake and kind of funky but they taste delicious and are perfect with a whole wheat tortilla and salsa on it. We also like to make a fruit smoothie to go with it if we make these for dinner.
Green Eggs Naturally Colored
The recipe is so simple. Place 12 eggs, two big handfuls of spinach, and 1 cup milk. Blend in blender until you can’t see any spinach leaves. Use can use any blender, but my Blendtec does great at getting rid of any evidence of spinach leaves. Next add 1/4 cup butter to a pan and melt. Once melted pour the eggs into the pan. Put temperature on Med/High and stir constantly.
It might look like they will never cook, but then all of the sudden they get a little foamy and bubbly and the scrambled eggs start to form! Once they almost looked cooked you can add cheese or wait until they are on the tortilla to add cheese. These are some of our favorite tortilla ever from Costco.Place the eggs in the tortilla or eat them plain. I love to add fresh tomatoes or salsa to them! You could make these for any meal of the day! *Tip of the Day – I like to buy the big cheap bags of spinach from Costco. If you think you won’t use the whole bag before it goes bad, put it in the freezer. It is perfect for smoothies or even these spinach eggs, and it lasts forever!!
- 12 Eggs
- 1 cup of milk
- 2 cups (or handfuls) of Spinach
- 1 Cup Cheese
- Salt and Pepper
- Salsa (optional)
- Crack eggs into blender. Add one cup milk and 2 cups or 2 handfuls of spinach.
- Pour in buttered pan on med/high and stir.
- Add salt and pepper to taste.
- Once cooked eat plain or place in tortilla and top with cheese and salsa.
