Growing up we had a lot of our Sunday Dinners at my dad’s moms, our Grandma Hodges house. She lived right next to the church, so right after church we would run over there and everything would be almost ready. We loved to help her put the finishing touches on dinner. Things like taking the breadsticks out of the oven and putting them on a serving plate, or adding the cheese to the Broccoli dish. Just thinking back on that time makes me miss her so much. Wonderful times were spent in that kitchen either helping grandma, setting the table, or playing on her old type writer while every one else help (Not me). One of my favorite side dishes was Grandma’s Jellied Carrot and Pineapple Salad. Sounds kind of weird, but it was delicious! Grandma made a lot of delicious desserts like Key Lime Pie or Chocolate Pie, but I think everyone in my family would agree our favorite was Grandma’s Frozen Cheesecake! It is an amazing dish. When she used to make it, it was made with raw eggs, so she stopped making it as much, but we later found out that you didn’t really need the raw eggs in order to make it delicious!
Grandma’s Frozen Cheesecake
- 3 Pks. Graham Crackers
- 3 T Melted Butter
- 2 8oz Cream Cheese
- 1 quart Whipping Cream
- 1 1/2 Cup Sugar (divided)
- 1 tsp Vanilla
- Strawberries (Fresh or Frozen)
Blend 3 Packs of Graham Crackers in a blender, one Pack at a time. Melt 3-4 T of Butter and mix into cracker crumbs. Place in 11×13 baking pan. Leave about 1 cup out for top!Beat cream cheese together and add 1 cups sugar and 1 T Vanilla. Beat until Smooth.Whip one quart Heavy Whipping Cream. I used my blender, but you can also use a hand mixer. Right before it reaches peaks add 1/4 cup sugar. Beat until stiff peaks.
Fold together heavy cream and cheese mixture. Pour onto Graham Cracker mixture and smooth out. Add the rest of the Grahams crackers by sprinkling them on top.Wrap tightly in saran wrap and place in freezer for 3-4 hours. Before serving prepare the strawberry syrup. Place 2 cups frozen or fresh strawberries in a blender, add 1/4 c of sugar and mix until desired consistency. When time to serve, cut each piece and then top with Strawberries!
